I just noticed something odd when quickly running miniupnpd-2.0 through it's paces. Please take a look at these screenshots taken from Windows 10 (latest build and patches). There are subtle differences that may point to where the igd version 2 incompatibility is:

Note that in the igd v1 implementation, the router hosting miniupnpd-2.0 lists the devices as part of the network infrastructure and has a different context menu (right-click menu) for the device. When compiled with --igd2, the router is classified as an "other device". Might this explain why when igd2 is compiled in, the router hosting miniupnpd doesn't show up in the list of available devices in the UCCT 2.0?

Since Microsoft Windows 10 and Xbox One share a tremendous portion of the same code-base, the igd v2 incompatibility with XBone might be related eh?

Through multiple middlemen, I've had an answer from microsoft.
Windows just don't support UDA 2.0 :
We will evaluate in the future the work needed to update the UDA implementation in Windows to 2.0 but have no information or timeline to share on that at this point.
About IGD v2, they don't answered me, but I guess they are not supporting it for the same reason : they dont consider it as backward compatible (even if it is !)
